The characteristics of our oil
Our oil is made from a unique blend, where the protagonist is Carolea , a Calabrian cultivar with a sweet and harmonious flavour, with delicate notes of almond and vegetal hints.
Other varieties are added to this which enrich the oil with complexity:
the Pendolino , fresh and light;
the Frantoio , structured and fruity;
the Nocellara Messinese , aromatic and full-bodied;
Coratina , which gives strength and spiciness.
The uniqueness of our oil also comes from the terroir where our olives grow. The Ionian Sea breeze mitigates the currents and favors the development of delicate, natural aromas. Fresh aromas of wild herbs such as wild chicory, purslane, and borage are evident, along with sweeter, softer notes of almond and a subtle hint of sun-dried tomato, making the oil harmonious and very pleasant on the palate.
Color : bright green with golden reflections
Aroma : intense and harmonious, with herbaceous and almond notes
Taste : sweet at first, with a crescendo of spiciness and intensity that recalls wild herbs and leaves a persistent and enveloping aftertaste
Harvesting and Cold Pressing
The quality of our oil begins in the olive grove, where each olive is harvested strictly by hand. This traditional method preserves the integrity of the fruit, avoiding any cracking or damage that could compromise its flavor and aroma.
The olives are taken to the mill within 6 hours of harvest, where they are weighed, defoliated, and carefully washed, ready for pressing. The production process takes place at a controlled temperature below 27°C, using the cold-pressing technique, which is essential for preserving the product's organoleptic characteristics.
Thanks to this attention to detail at every stage, from the olive grove to the mill, our oil retains its natural aroma, flavor, and color, offering an authentic experience that reflects the passion and family tradition with which it is produced.
